Celebrating Chocolate on Chocolate Ice Cream Day

Whether it’s National Alpaca Day, Tater Tot Day or Talk Like a Pirate Day, it seems like almost every day, the internet is celebrating a holiday. From food to animals and everything in between, there is a ton of observance days worldwide that Peekaboo is ready to get on board with.  This month we couldn’t be more excited, because June 7th is National Chocolate Ice Cream Day. We choose to celebrate by loading up on Peekaboo’s Chocolate Ice Cream with Hidden Cauliflower, because why not?!

The History of Chocolate Ice Cream

While we haven’t fact checked this information, we’ve been told that the earliest frozen chocolate recipes were published in Naples, Italy in 1963. Chocolate, which was actually created before vanilla, was one of the first ice cream flavors and is definitely a staple for Peekaboo. And, let’s get real, chocolate is something we can all get behind.

How We’re Celebrating National Chocolate Ice Cream Day 

Wondering how to celebrate your favorite Peekaboo flavor? Try our fabulous peanut butter chocolate milkshake recipe to commemorate this sweet day!

The great thing about this recipe is that it’s straight forward, so even your kiddos can join in on the fun. There really is no better pairing than chocolate and peanut butter, so scoop, pour, and start that blender! 

Ingredients: 

  • 2 cups of Peekaboo Chocolate Ice Cream with Hidden Cauliflower
  • 1 cup of milk (coconut or almond milk may be substituted for added flavor)
  • 1/3 cup of peanut butter (use the crunchy kind if you like to live on the wild side)
  • 1 cup of ice
  • Dollop of whip cream
  • Sprinkle of cocoa powder

Grab a blender and throw in the milk, ice and peanut butter and blend until the mix is super smooth.

Then add in your Peekaboo ice cream and pulse or blend until desired consistency – but not for too long, we don’t want a melty milkshake! If you’re feeling fancy, add a dollop of whip cream and sprinkle a bit of cocoa powder on top!

Frozen Chocolate Brownie Bites

Looking to get some brownie points? Try turning our Chocolate Ice Cream into Chocolate Brownie Ice Cream Squares. Perfect for summer, these treats are made of a layer of brownies, ice cream, chocolate fudge and whipped cream. Easy to make, stores well, and enjoyed by kids and adults. Who can say no to that?

Ingredients: 

  • Brownie Layer: Choose a boxed mix designed for a 9” X 13” pan. We like Ghirardelli Fudge Brownies
  • Ice Cream Layer: 3 pints of Chocolate Ice Cream with Hidden Cauliflower 
  • Chocolate Layer: ¾ cup heavy whipping cream, 1 cup of semi-sweet chocolate chips
  • Whipped Cream Layer: One 8 oz. tub of whipped topping (cool whip)
  • Toppings: Mini chocolate chips

Directions: 

Brownie Layer

Line a 9″x 13″ pan with parchment paper and prepare brownies according to package, then spread batter into pan. Bake 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs, but no wet batter. 

Ice Cream Layer 

Allow pints of Peekaboo Chocolate Ice Cream with Hidden Cauliflower to sit out at room temperature until soft enough to spread over the cooled brownies. Once the ice cream has been evenly spread, place the entire pan in the freezer to allow the ice cream to refreeze.

Chocolate Layer

Heat the cream in the microwave for 1-2 minutes until hot, do not let it boil. Add chocolate chips to the hot cream and set aside (undisturbed) about 3 minutes to allow the chocolate to melt. After 3 minutes, stir until the cream and chocolate are fully combined. Allow to cool to room temperature and then pour the chocolate over the ice cream layer, spreading evenly.

Whipped Cream Layer

Thaw 1 small tub of Cool Whip at room temperature until spreadable. Once thawed, spread whipped topping over chilled chocolate layer. Complete with toppings of your choice. Mini chocolate chips are our go-to. 

Return pan to freezer and FREEZE AT LEAST 3 HOURS before serving. The entire dessert can be made ahead and kept in the freezer (covered) for up to three days. Three days of chocolatey goodness… yum!
