National Comfort Food Day Favorites

It’s one of our favorite days of the year - National Comfort Food Day! Especially this year, we can all use a little comfort food in our life. Here at Peekaboo, we think this is an underrated holiday -  dedicated to all of those dishes that soothe your soul and leave you feeling warm inside, even on the coldest of days. Your favorite comfort foods make you want to indulge and dive into a second serving every time. So whether your favorite comfort food is a decadent dessert (ahem) or something savory, we’re sharing  our favorite dishes to enjoy Comfort Food Day your way.

1. Grilled Cheese Sandwich

The best way to get started on this list of tasty and comforting cuisines is the American-classic and one of our favorite comfort foods, the grilled cheese sandwich. Thinking of the golden-brown crust and the melting cheese of my favorite sandwich makes us feel all kinds of warm and toasty inside. For a quick and easy-to-make meal that warms us up from the inside out, a grilled cheese sandwich is the perfect comfort food.

All that this recipe calls for is bread, butter, a cheese of your choice (we like to stick with a nice, gooey cheddar) and you’re ready to eat! Typically, a hearty bowl of tomato soup is our side dish of choice. But the sky's the limit! Feel free to experiment with different types of breads, cheeses and side dishes to find the perfect comfort food combination.

2. Chicken Noodle Soup

When the weather starts to drop during the winter (yes, even here in Miami, Peekaboo’s home base!), there’s nothing more soothing to combat the cold than a bowl of chicken noodle soup. This comfort food is particularly popular for people who are feeling a bit under the weather. The combination of vitamin-rich chicken broth and nourishing vegetables are a great choice if you are dealing with the common cold or an upset stomach.

Bonus? Chicken noodle soup is a comfort food recipe that is super cost-effective - we use a whole chicken! Buying a whole chicken is cheaper than buying separate pieces at the grocery store. This is a simple meal to prep in advance, so you can cook up a big pot for the entire family to enjoy. If you are looking for a healthy and affordable comfort food recipe, then a soothing bowl of chicken noodle soup may be just what you ordered.

3. Ice Cream Sundae

We may be biased (wink, wink) but there are not too many things in this world that are as satisfying as the building your own ice cream sundae! We, of course, consider ourselves experts in this category ;)

With a full serving of hidden veggies in every pint, we think this is the very BEST way to indulge in Comfort Food Day with less guilt. Stack your way to comfort with our favorite toppings like marshmallows, chocolate chips, nuts, and whipped cream for the perfect comfort food day dessert. Whatever your tastes may be, the right toppings can really help to bring your ice cream sundae to life.

4. Spaghetti & Meatballs

If you took a survey to find out what the most popular Comfort Food Day recipes were, spaghetti and meatballs is almost guaranteed to top the list.

The best part about spaghetti and meatballs is that it can be prepared entirely from scratch or you can use store-bought ingredients to speed up the process. For those fellow busy mamas out  there, we love to purchase a jar of tomato sauce from the store and combine it with a simple mix of sauteed onions and garlic, tomato paste and seasonings to add a personal homemade touch. We love how family-friendly this dish is, too. It’s sure to be a crowd pleaser for the whole family. Always extra delicious when topped off with a scoop of ice cream for dessert!
